Fresh Coconut Cake
When comes to cooking or baking I prefer to use fresh, locally sourced and seasonal produce. Coconut is one such versatile fruit or nut that is easily available all year round and inexpensive.
Kari Pan
This is a great snack for tea time, especially on cold winter days. It’s spicy, warm and comforting. If one can't take the spiciness, one can reduce the spices to your liking.
Lemon 🍋 Curd
When life gives you homegrown lemon trees it is a blessing not just making lemonade but endless options. Besides Lemon curd, one can make simple syrup for cocktails, salt them, make pickles, lemon drizzle cakes, cup cakes , cookies. Use as fillings in tarts, pies, Pavlova etc.
Mango Ice cream
This is the easiest ice cream dessert to whip up.
Chicken Kaukswe
In 1942, when Burmese families fleeing the Japanese invasion landed in Calcutta, India - now called Kolkata - one of the few things they brought with them were culinary keepsakes - including their national dish, Kaukswe (pronounced as Cow Shway).
Coconut Crepe Rolls
I used to make them often long before when my children were growing up.
Hot Cross Buns
Learnt to bake these last year due to lockdown.
