Jerusalem artichoke soup
Healthy and nutritious soup made from Jerusalem artichoke.
Ingredients
- 500 g Jerusalem artichoke
- 1 Parsnip
- 1 Onion
- 6 clove Garlic
- 300 ml Cream
- 200 ml Crème fraîche
- splash White wine
- pinch Salt, pepper
- 800 ml Water
Instructions
- Fry onion and garlic until golden.
- Add Jerusalem artichoke, parsnip, and fry for 5 min.
- Add a splash of white wine and mix well.
- Add water and boil for 15 min.
- Use a food mixer to mix everything until the mixture is soft and smooth.
- Add cream and boil for 5 min. Then turn off the heat, add creme fraiche, salt continuously stirring the mixture.
- When serving add pepper and olive oil.
