Fry onion and garlic until golden.
Add Jerusalem artichoke, parsnip, and fry for 5 min.
Add a splash of white wine and mix well.
Add water and boil for 15 min.
Use a food mixer to mix everything until the mixture is soft and smooth.
Add cream and boil for 5 min. Then turn off the heat, add creme fraiche, salt continuously stirring the mixture.
When serving add pepper and olive oil.
