Γύρος σπιτικός // Homemade Yiros

Yiros for us Greeks is sacred and beloved by everyone! We love it at any day and anytime. When I make my own though, I like to serve it with a small array of Grecian delights to accompany this delicious and spiced roll of meat so everyone can create his or her magic roll we call yiros. Now you can create your own Greek yiros with quality ingredients, spices and herbs that are beneficial.

Ingredients

  • 500 g chuck mince
  • 1 large onion grated
  • 2 garlic cloves grated (hearts removed)
  • 1/2 cup fresh chopped parsley
  • 1 tsp dry thyme
  • 1 tbs dry oregano
  • 1/2 cup breadcrumbs soaked in little bit of milk or wine
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cumin
  • 1 free range egg
  • Salt and pepper
  • Drizzle of extra virgin olive oil

Instructions

  • Combine all ingredients in a bowl and mix well. Take a large pinch and fry so you can taste it and adjust the flavour accordingly.
  • Wrap the mince mixture in baking paper tightly like a candy wrap and place in the fridge for 24 hours to marinate. Then pop in the freezer to go solid for minimum of 2 days or more.
  • On the day you want to have yiros, put your frying pan on medium high heat with a knob of butter and a drizzle of olive oil.
  • Take your yiros log, hold it up right over your chopping board and very carefully, with a sharp knife, slice off thin pieces.
  • Fry them to your liking and serve immediately with tzatziki, pita bread, greek salad and an array of condiments.
