Mushroom and sauteed veggies Grilled Sandwich

Nutritious, filling, and flavourful. This is a grilled sandwich you can have on the go. It has a super easy prep and is very delicious, especially if your love mushrooms.

Ingredients

  • 400 g Button Mushrooms - cleaned and sliced
  • Approx 1 cup Sliced Red Bell pepper + yellow bell pepper (alternative use capsicum)
  • 1/4 cup Finely chopped onion
  • 1 large Tomato - sliced
  • 4-5 medium Cloves of garlic - finely chopped
  • 1-2 Green chilly - finely chopped
  • 1/2 cup Broccoli florets - Blanched in drained water and drained
  • 2 tbs Black pepper - ground
  • 1 tsp Pasta seasoning / mixed herbs
  • 1 tbs Corriander - chopped
  • 1 tbs Olive oil/ butter + more for brushing
  • 8-10 Slices of multigrain bread (or any other bread of your choice)
  • Chilly-Cheese spread / mayonnaise
  • Cheese slice (optional)

Instructions

  • In a wide bottom non-stick pan add 1/2 tsp oil, garlic, and green chillies and temper until the garlic turns light golden brown. Then add onion and saute until caramelized. Add in the sliced mushrooms and let look for 4-5 mins on one side. Initially, the mushrooms will leave a lot of water. Once the water has evaporated, add 1/2 teaspoon pasta seasoning, ½ teaspoon crushed black pepper and 1 tablespoon chopped parsley or coriander leaves. Also, add salt as per taste. (You can add any dried herb or fresh herbs of your choice) mix and cook for another minute on high heat. Transfer to another container.
  • In the same pan, brush some oil. Add in the bell peppers and let cook on high heat for a minute. Sprinkle salt and pepper to taste. Cook for another minute. Transfer to a bowl.
  • Repeat the above step for blanched broccoli florets. Set aside.
  • In the same grill pan brush a tsp oil and place tomato slices. Cook until charred and turn/flip on the other side. let cook. Transfer to a plate.
  • Apply the dressing to bread and spread mushroom filling. Add some bell pepper. You can add some grated cheese on top of the mushroom filling if you want. Also if you prefer, you can brush the bread slices with a bit if olive oil or spread some butter.
  • Place in a preheated toaster or grill. You can also toast these sandwiches in a handheld stovetop toaster.
  • Serve hot alongside sauteed broccoli and grilled tomatoes.
