Herb Goat Cheese Omelet

Who doesn’t like breakfast? Breakfast is typically the most important meal of the day. It gives you a lot of energy and it helps you stay healthy. In this post, I will tell you about one of my favorite breakfast recipes that I have been making for years now: Herb Goat Cheese Omelet

Ingredients

  • 2 tbs rigotta (goat cheese)
  • 2 tbs finely chopped fresh herbs
  • 3 large eggs
  • 2 tsp whole milk
  • 1/4 tsp kosher salt
  • 1/8 tsp freshly ground black pepper
  • 1 tsp unsalted butter

Instructions

  • In a small bowl, using a rubber spatula, mash the goat cheese with the measured herbs and set it aside.
  • Whisk eggs, milk, salt, and pepper in a medium bowl until yolks and whites are evenly mixed. Place in a serving dish.
  • Melt butter in an 8-inch nonstick skillet over medium heat until fluffy. Add the egg mixture and stir constantly with a rubber spatula until small clumps form about 2 to 3 minutes. Gently shake the pan and spread the egg mixture evenly in the pan with the spatula - the top of the eggs should be creamy. Remove pan from heat. Using the spatula, fold one-third of the omelet over itself. Gently push the folded side of the omelet toward the edge of the pan. Turn the pan over onto the serving platter and roll the tortilla seam side down onto the platter. Garnish with more herbs and serve immediately.
