Jerusalem artichoke soup

Healthy and nutritious soup made from Jerusalem artichoke.

  • 500 g Jerusalem artichoke
  • 1 Parsnip
  • 1 Onion
  • 6 clove Garlic
  • 300 ml Cream
  • 200 ml Crème fraîche
  • splash White wine
  • pinch Salt, pepper
  • 800 ml Water


  • Fry onion and garlic until golden.
  • Add Jerusalem artichoke, parsnip, and fry for 5 min.
  • Add a splash of white wine and mix well.
  • Add water and boil for 15 min.
  • Use a food mixer to mix everything until the mixture is soft and smooth.
  • Add cream and boil for 5 min. Then turn off the heat, add creme fraiche, salt continuously stirring the mixture.
  • When serving add pepper and olive oil.
