San Choy Boy
San choy Bow (or Chinese lettuce cups) is a fun and delicious DIY family friendly dinner. It's also cheap, healthy, and super quick to make. It literally comes together in under 15 minutes!

Ingredients
- 2 tbs soy sauce
- 1 tbs oyster sauce
- 1 tbs sesame oil
- 1 tbs coconut oil
- 60 g vermicelli rice noodles
- 2 tbs peanuts crushed
- 500 g pork mince
- 10 medium iceberg lettuce leaves
- 1 medium carrot, diced
- 1 small onion, diced
- 2 medium cloves garlic, crushed
- 1 small shallot, chopped
- 2 medium sprigs coriander, leaved picked and chopped
Instructions
- Mix sesame oil, soy and oyster sauce in a bowl and set aside.
- Heat coconut oil in in a wok and pan-fry the pork for 5 minutes, breaking up big chunks until fully cooked through and brown. In the meantime, prepare the noodle as per pack instruction.
- Add carrot, onion, garlic and cook for another 5 minutes. Stir in the sauce and the noodles.
