Harcha is a popular street food cake/bread made of semolina. Moroccans love it, they have it for breakfast and also with the afternoon mint tea. It comes in different recipes, you can make it vegan or make a richer version by adding milk or yogurt and eggs. It can be cooked in a saucepan on the stove or baked in the oven. The result is always super yummy 🤤

  • 2 cup Semolina
  • 2 cup Milk
  • 3/4 cup Vegetable oil
  • 1 tbs Butter
  • 1 large Egg
  • 1 tbs Sugar
  • 1/2 tsp Vanilla extract
  • 1 tsp Baking powder
  • 1/2 tsp Salt


  • In a bowl, add the semolina, oil and butter .
  • Gently use your hands to help the semolina absorb the oil and butter.
  • Add the egg and whisk.
  • Add the milk and the rest of the ingredients and whisk well to combine all the ingredients together. Set aside for 10 minutes.
  • Grease a medium saucepan, pour the batter in it, flatten well with a spatula to help get a smooth top.
  • Cook gently on a medium low heat for 5 to 6 minutes per side or until you see that the top of the harcha is not runny. It makes it easier to flip over the cake and cook the other side. The other option is to bake it in a preheated oven 180 C until golden brown.
  • Serve with jam or honey, or with butter or clotted cream, and of course a good glass of Moroccan mint tea.
