Gözlemes had a humble beginning as a common breakfast food or snack in Turkey. In the late 20th century, they began popping up commonly as fast food in Turkish markets with tons of different toppings and fillings and were unsurprisingly wildly popular. Due to this popularity they slowly spread around the world and can commonly be found today and Turkish restaurants or food stalls.

Gözleme
A easy recipe for a delicious Turkish treat. (A @Phoodigram recipe.)
Ingredients
- 250g self raising flour
- 220g full fat natural greek yoghurt
- 1/2 teaspoon salt
- Extra flour for dusting
- Olive oil
- 2 cups chopped spinach
- 1 cup crumbled feta
- Lemon wedges
Instructions
- Place yoghurt in a bowl and whisk until “flat”.
- Add salt and mix it in.
- Slowly add the flour to the mixture, whilst stirring at the same time.
- Once combined, knead on a surface lightly dusted in flour and then form into a ball.
- Place in a bowl and cover with cling film. Leave to rest for 15 minutes.
- After 15 minutes, take it out of the bowl and cut it into quarters.
- One at a time, roll out the dough quarters. You want to get it paper thin, to the point that it is almost see through.
- Add spinach and feta. And crimp edges with fork.
- Cook the gozzlemes in a hot, oiled pan until brown and crispy.
- Cut with a pizza cutter, serve with lemon wedges and enjoy.
