Μακαρόνια με Τυρί // Greek Macaroni and Cheese
This is my favourite dish that feeds and pleases the whole family!
It requires only 3 ingredients, and it is ready in 15 minutes, making it perfect for when you are running late.
Therefore this dish is an absolute must.
Its success lies on the cheese which it has to be the Greek Feta because once you heat it up it becomes lusciously creamy. But you can easily use goat’s cheese instead.
Ingredients
- half packet of spaghetti
- 200 g Greek Feta or other Goat cheese crumbled
- drizzle of Extra Virgin Olive Oil
- freshly grated black pepper
- sprinkle of dry thyme (optional)
Instructions
- Cook the pasta according to the packet instructions but with half the amount of salt because the cheese is salty.
- Drain and reserve some pasta water, about half a cup. In a clean cooking pot pour enough Extra virgin olive oil to cover the bottom and warm it up slightly over medium heat.
- Add the crumbled Greek feta or goat’s cheese and stir gently. Once the cheese starts to soften and become creamy, add the pasta stir to coat and add some of the pasta water.
- Turn off the heat and stir vigorously to coat the pasta with a creamy texture over it. Serve immediately with freshly grated black pepper and a sprinkle of dry thyme.
