San Choy Boy

San choy Bow (or Chinese lettuce cups) is a fun and delicious DIY family friendly dinner. It's also cheap, healthy, and super quick to make. It literally comes together in under 15 minutes!

  • 2 tbs soy sauce
  • 1 tbs oyster sauce
  • 1 tbs sesame oil
  • 1 tbs coconut oil
  • 60 g vermicelli rice noodles
  • 2 tbs peanuts crushed
  • 500 g pork mince
  • 10 medium iceberg lettuce leaves
  • 1 medium carrot, diced
  • 1 small onion, diced
  • 2 medium cloves garlic, crushed
  • 1 small shallot, chopped
  • 2 medium sprigs coriander, leaved picked and chopped


  • Mix sesame oil, soy and oyster sauce in a bowl and set aside.
  • Heat coconut oil in in a wok and pan-fry the pork for 5 minutes, breaking up big chunks until fully cooked through and brown. In the meantime, prepare the noodle as per pack instruction.
  • Add carrot, onion, garlic and cook for another 5 minutes. Stir in the sauce and the noodles.
