Sfenj

Sfenj is a Moroccan doughnut made of flour, water, yeast, some sugar and salt. It's completely vegan and delicious. These fried circles are very popular as street food, are served with breakfast or as a snack with a cup of mint tea. In Morocco, it’s always the man of the family that gets up early to go and buy sfenj for breakfast. I made my dough with an electric mixer or a dough maker. You can use your hands if you don’t have one.

Ingredients

  • 250 g Plain flour
  • 125 g Warm water
  • 1 tsp Dried yeast
  • 1 tsp Salt
  • 1 tsp Sugar
  • Vegetable oil for frying
  • 3 tbs Vegetable oil

Instructions

  • In a bowl, add the yeast, the sugar and water and mix well.
  • Add the flour and salt and let the machine mix for 5 minutes. The dough has to be very loose and sticky (if you are using your hands, knead the dough for 10 minutes).
  • Brush the dough with oil, cover with cling film and set aside to double the size.
  • In a frying pan, pour a good amount of vegetable oil and and start heating it.
  • Grease your hands with oil to make it easier to manage the dough.
  • Divide the dough into same size balls.
  • Take the dough ball and with your hands make a hole in the middle and add it onto the hot oil to fry.
  • When it starts forming bubbles on the top, flip it over to cook the other side. The heat has to be medium low.
