Potato and Peas Curry

The Story
Potato and peas curry is a very common vegan entree in India. It is normally eaten with flatbreads. It can be as spicy as you would like with the number of chilies added. My parents did not care much for potatoes but my husband loves them. So, I ate them more as an adult and came to relish them in many different forms. Potatoes are such an universal and versatile vegetable that I think people from many parts of the world would like this dish. It would be great to hear how you cook potatoes and what type of spices you may use with them.

Potato and Peas Curry

This is a common Indian curry made with potatoes, peas, tomatoes and some spices. It is normally eaten with flatbreads and very easy to make.

Ingredients

  • 8 small Potatoes, chopped into quarters
  • 2 medium Tomatoes, chopped
  • 1/2 cup Frozen or fresh peas
  • Handful Cilantro leaves, chopped small
  • 1 Green chilies, minced
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric
  • 1/8 tsp Asafetida/hing
  • 1/4 tsp Coriander powder
  • 1/2 tsp Garam masala
  • Salt to taste
  • Oil for frying

Instructions

  • Cook potatoes in water with a little salt in a pressure cooker for 3 whistles and on low for 2 minutes. Otherwise, cook on stove top for 15-20 minutes. When done, set aside and save the water.
  • Heat a little oil in a large, flat pan and add cumin seeds. When it browns a bit, add all seasonings except garam masala and fry for a minute or so.
  • Add potatoes to seasonings and fry for a few minutes.
  • Then add tomatoes and peas and fry for a few more minutes till tomatoes liquify.
  • Finally, add the garam masala and simmer for a few more minutes with any desired salt. Garnish with cilantro leaves.
